Quick and Easy Fresh Straw(or any)berry Pie
Now that it’s officially strawberry season, I thought you might like to try this quick, easy and cheap recipe for Fresh Strawberry Pie. When my Mom started making this years ago, it became one of those recipes that must be made every year, and at least several times, too! It’s easily adaptable to other berries, too (my favorite is actually a mix of raspberry, black raspberry and some blueberries thrown in).
Fresh Berry Pie and Glaze
3 Tbl flavored gelatin
3/4 c sugar
3-4 c fresh berries
1 c boiling water
*Graham cracker crust
Combine gelatin, cornstarch and sugar in saucepan. Add 1 cup boiling water. Bring mixture to a boil. Remove from heat and cool. Arrange berries in shell. Pour cooled gelatin mixture over berries. Chill to set.
*You can make your own graham cracker crust: 1 1/2 cups finely ground graham cracker crumbs, 1/3 cup white sugar, 6 tablespoons butter, melted. Combine and press into pan. Chill for one hour before use.
With smaller berries, I find it best to put a layer of berries down and then pour some glaze over it, then put another layer down. Otherwise the berries on the bottom do not get coated. I don’t like stirring it all together because then the raspberries start breaking down. But you don’t have to worry about that with strawberries.
Also, pretty much any berry-flavored gelatin will go with any berry, I usually just use whatever I have in my cupboard. I’ve used cherry gelatin with Strawberries, used strawberry gelatin with black raspberries. It’s all good–just use your best judgment!
